Portable foods are your best bet when planning a picnic but you might not have a lot of time to prepare some finger foods and snacks for that upcoming trip. Skip the long prep time in the kitchen and put together an assortment of salads in a jar. Layering some of your favorite salad ingredients in a mason jar (or small airtight containers) makes the perfect meal for a picnic. Just stow these away in a cooler until they're ready to serve!

Mediterranean Pasta Salad


Go Greek for an afternoon with a refreshing Mediterranean salad. You'll need to cook up some orzo pasta and set it aside for this recipe. Need a gluten-free alternative? Try quinoa or brown rice instead! Start by dropping a few tablespoons of Greek vinaigrette to the bottom of the jar or container, then layer with fresh cucumbers, artichoke hearts, chopped green peppers, and Kalamata olives. Throw in your orzo pasta (or pasta alternative) and then top with feta cheese and tomatoes. Fill the rest of the jar with romaine lettuce and you're good to go.

Classic Cobb Salad


Enjoy a satisfying mix of your favorite meats, like turkey, grilled chicken, and ham, cheeses, and veggies with a classic Cobb salad. Start with a few tablespoons of blue cheese dressing, then add layers of cherry tomatoes, cucumbers, red onions, hard boiled eggs, avocado, bacon, and grilled chicken or other meats. Fill the rest of the jar with romaine lettuce and add some crumbled blue cheese for extra flavor.

Refreshing Grilled Chicken Salad


Keep things healthy with a grilled chicken salad, your favorite greens, and a colorful mix of chopped veggies. Make a simple dressing by mixing together two tablespoons of extra virgin olive oil, one tablespoon lemon juice, and black pepper to taste in a small bowl before pouring the dressing into the jar or container. Next, layer on sliced green and red bell peppers, cherry tomatoes, and cucumbers. Fill up half the jar with fresh spinach leaves or arugula then top with a serving of grilled chicken strips.
