A Mother's Day brunch is the quintessential way to celebrate your mom's hard work and endless love. Give the old bacon-and-eggs an upgrade with three simple recipes that put a unique spin on traditional meals:

Dutch Baby Pancakes

Like a hearty crepe, Dutch pancakes are light yet comfortably filling and a hit with kids. They're a reliable crowd-pleaser and surprisingly easy to make. 

Ingredients: 4 eggs, 1 tablespoon sugar, 2/3 cup flour, 2/3 cup milk, 2 tablespoon butter, ½ teaspoon of salt, 1/8 teaspoon grated nutmeg

Directions: Preheat oven to 400 degrees. Grease two 9-inch round cake pans with butter. Mix remaining ingredients briefly in a blender. Divide batter into two pans. Bake for about 20 minutes or until a lightly golden crust forms. (The crust will rise up to create a bowl-like pancake). Serve topped with butter, syrup or fresh fruit.

Chia Pudding Fruit Parfait 

Chia pudding layered into colorful parfait creates a beautiful and healthy side. Consider the health benefits of the chia seeds a bonus!

Ingredients: 1/3 cup chia seeds, 1 cup coconut milk, 1 teaspoon vanilla extract, 1 cup plain Greek yogurt, 1 tablespoon honey, 1 pint strawberries or blueberries, granola

Directions: Mix: chia seeds, coconut milk, yogurt, honey, and vanilla. Refrigerate for at least four hours so the chia seeds set into a thickened texture.

Layer the chia pudding mixture into four separate containers with granola and fruit (use glass containers for maximum visual impact). 


Candied Bacon 

​Candied bacon is a sweet side with a spicy kick. A little brown sugar and cayenne can go a long way in adding flair and flavor to this easy morning snack.

Ingredients: ½ pound thick-cut bacon (8 slices), ½ teaspoon cayenne, ¼ cup light brown sugar, ¼ teaspoon black pepper

Directions: Preheat oven to 375 degrees. Mix cayenne, brown sugar, and black pepper in a bowl, then toss each slice of bacon to coat. Line a baking sheet with a wire rack, then lay the bacon on the rack. Cook for about 15 minutes, or until crisp, on the top rack. Let cool before serving.
